Ingredients:

  • 1 lb ground beef
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can diced tomatoes
  • 4 cups beef broth
  • 2 cups diced potatoes
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/3 cup uncooked rice

Instructions:

  1. In a large pot, brown the ground beef over medium heat. Drain any excess fat.
  2. Add the onion and garlic to the pot and cook until the onion is softened.
  3. Add the diced tomatoes, beef broth, potatoes, carrots, celery, basil, oregano, salt, and pepper. Stir to combine.
  4. Bring the soup to a simmer and let it cook for 20-25 minutes, or until the vegetables are tender.
  5. Add the uncooked rice to the pot and simmer for an additional 20 minutes or until the rice is cooked.
  6. Taste and adjust seasonings as needed.

  1. Heat a large pot over medium-high heat. Add the stew beef and cook until browned on all sides. Remove from the pot and set aside.
  2. Add the onion and garlic to the pot and cook until the onion is softened.
  3. Return the beef to the pot and add the beef broth, water, diced tomatoes, carrots, celery, pearl barley, thyme, salt, and pepper. Stir to combine.
  4. Cover and bring the soup to a simmer. Let it cook for 1-2 hours, or until the beef is tender and the barley is cooked.
  5. Taste and adjust seasonings as needed.
  6. Serve hot and enjoy!
