  • 10 oz Kosher salt
  • 8 oz brown sugar
  • 1 tablespoon whole black peppercorns
  • 1 1/2 teaspoons whole allspice berries
  • 1 1/2 teaspoons dried rosemary
  • 1 1/2 teaspoons dried thyme
  • 5 bay leaves
  • 1 onion, quartered
  • 1 orange, quartered
  • 1 lemon, quartered
  • 1 turkey (12-18 pounds)

Instructions:

  1. In a large pot, combine the water, salt, brown sugar, peppercorns, allspice berries, rosemary, thyme, and bay leaves. Bring to a simmer, stirring to dissolve the salt and sugar. Remove from heat and let cool to room temperature.
  2. Add the onion, orange, and lemon to the brine.
  3. Remove the giblets and neck from the turkey cavity. Rinse the turkey inside and out, and pat dry with paper towels.
  4. Place the turkey in a large brining bag or in a large container that can be sealed with a lid. Add the brine to the bag or container, making sure the turkey is fully submerged in the liquid. Seal the bag or container and refrigerate for 12-24 hours.
  5. Remove the turkey from the brine and rinse it inside and out with cold water. Pat dry with paper towels and rub with olive oil, if desired.
  6. Roast the turkey according to your preferred method, using your favorite stuffing or aromatics. Enjoy!

  1. Preheat the oven to 350 degrees F.
  2. In a medium bowl, mix together the butter, thyme, rosemary, sage, parsley, salt, and pepper.
  3. Season the cavity of the turkey with salt and pepper, and stuff with the orange, onion, celery, and carrot.
  4. Tuck the wings under the bird and tie the legs together with kitchen twine.
  5. Spread the herb butter all over the turkey, making sure to get into every nook and cranny.
  6. Place the turkey on a rack set inside a roasting pan.
  7. Add the chicken broth to the bottom of the roasting pan.
  8. Cover the turkey with aluminum foil and roast for 2 hours.
  9. Remove the foil and roast for an additional 1-2 hours, or until the internal temperature of the turkey reaches 165 degrees F.
  10. Let the turkey rest for 30 minutes before carving.

My Verdict
