  • 1 tbsp olive oil
  • 4 bone-in chicken thighs
  • 1 onion, chopped
  • 1 red pepper, chopped
  • 3 cloves garlic, minced
  • 1 can (28 oz) diced tomatoes
  • 1/4 cup white wine
  • 1 tsp dried oregano
  • 1/4 tsp red pepper flakes
  • 1/4 cup chopped fresh basil
  1. Preheat oven to 400°F.
  2. In a large oven-safe skillet, heat olive oil over medium-high heat. Add chicken and brown on both sides, about 4 minutes per side. Remove the chicken from the skillet and set it aside.
  3. Add the onion and red pepper to the skillet and cook until they soften, about 5 minutes. Add garlic and cook for another minute.
  4. Stir in the tomatoes, wine, oregano, and red pepper flakes. Bring the sauce to a boil and then reduce the heat to low. Simmer for 5 minutes.
  5. Return the chicken to the skillet and spoon some sauce on top of each piece. Place the skillet in the oven and bake for 35 minutes.

Beef and Broccoli Stir-Fry

This stir-fry is a quick and easy way to get your daily dose of veggies and protein.

  • 1 lb flank steak, sliced thinly against the grain
  • 3 cups broccoli florets
  • 1/4 cup soy sauce
  • 2 tbsp hoisin sauce
  • 1 tbsp corn starch
  • 1 tbsp sesame oil
  • 1 tbsp vegetable oil
  • 1 tbsp minced garlic
  • 1 tbsp minced ginger
  1. In a small bowl, whisk together soy sauce, hoisin sauce, and cornstarch. Set aside.
  2. Heat a wok or large skillet over high heat. Add sesame oil and vegetable oil.
  3. Add beef and stir-fry for 2-3 minutes until browned. Remove beef from the wok and set it aside.
  4. Add garlic and ginger to the wok and stir-fry for 30 seconds until fragrant.
  5. Add broccoli and stir-fry for 2-3 minutes until it turns bright green.
  6. Pour in the soy sauce mixture and stir-fry for another 1-2 minutes until the sauce thickens.
  7. Return the beef to the wok and stir-fry for another minute until heated through.
  8. Serve hot over rice.
