Turkey Meatloaf With Oats Pioneer Woman

Recipe Number One: Super Yummy Chicken Parmesan
This chicken parmesan recipe is hands down the best thing you'll ever put in your mouth. It's easy to make and will impress even the pickiest of eaters. Check out that crispy coating! And the tomato sauce is absolutely heavenly.
Ingredients:
- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 cups seasoned Italian breadcrumbs
- 1 egg
- 1/4 cup milk
- 1 cup tomato sauce
- 1 cup grated mozzarella cheese
- 1/2 cup grated parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
Directions:
- Preheat oven to 375 degrees F (190 degrees C).
- Pound chicken breasts until they are about 1/4 inch thick. Season with salt and pepper.
- Set up a breading station: put the flour in one shallow dish, beat together the egg and milk in another shallow dish, and put the breadcrumbs in another.
- Dredge each chicken breast in flour, shaking off the excess. Dip in the egg mixture, letting any excess drip off. Coat in breadcrumbs, pressing them onto the chicken to help them stick.
- In a large skillet, heat the olive oil over medium-high heat. Cook the chicken until golden brown and crispy, about 5 minutes per side.
- Transfer the chicken to a baking dish. Pour tomato sauce over the chicken and sprinkle with mozzarella and parmesan. Bake for 25 to 30 minutes, or until the cheese is melted and bubbly and the chicken is cooked through.
Recipe Number Two: The Best Meatloaf Ever
This is not your typical meatloaf! The Pioneer Woman knows how to take a classic and make it even better. Just look at those caramelized onions and ketchup glaze. And the addition of bacon? Genius.
Ingredients:
- 2 pounds ground beef
- 1 cup breadcrumbs
- 1/4 cup milk
- 1/4 cup minced onion
- 2 cloves garlic, minced
- 2 eggs, beaten
- 1/4 cup chopped fresh parsley
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 8 slices bacon
- 1/2 cup ketchup
- 1/4 cup brown sugar
- 2 tablespoons white vinegar
Directions:
- Preheat oven to 350 degrees F (175 degrees C).
- Combine ground beef, breadcrumbs, milk, onion, garlic, eggs, parsley, salt, and pepper in a large bowl. Mix well.
- Line a baking sheet with parchment paper. Shape meat mixture into a loaf and place on the baking sheet.
- Arrange bacon slices over top of meatloaf, tucking the ends underneath the loaf.
- Stir together ketchup, brown sugar, and vinegar. Spoon half over the bacon-topped meatloaf.
- Bake for 45 minutes. Spoon remaining ketchup mixture over meatloaf and bake for an additional 15 minutes, or until cooked through.
