Spaghetti Casserole Pioneer Woman
Today I discovered the most delicious recipe for chicken spaghetti casserole from one of my favorite food bloggers. The Pioneer Woman’s version of this classic dish is truly mouth-watering and so easy to make. I am excited to share it with you all!
Ingredients:
- 1 7-ounce package spaghetti, broken into 2-inch pieces
- 2 cups cooked, shredded chicken
- 2 cans (10 3/4 ounces each) cream of mushroom soup
- 1 cup grated cheddar cheese
- 1/4 cup finely diced green bell pepper
- 1/4 cup finely diced onion
- 1 4-ounce can diced pimentos, drained
- 1 teaspoon seasoned salt
- 1/8-1/4 teaspoon cayenne pepper
- Salt and freshly ground black pepper
- 1/2 cup reserved pasta water
- Fresh parsley leaves, chopped, for garnish
Instructions:
- Preheat the oven to 350 degrees F. Grease a 9-by-13-inch baking dish with cooking spray.
- Cook the spaghetti according to package directions until al dente. Drain and rinse under cool water, then drain again. Set aside.
- In a large bowl, combine the chicken, soup, cheese, bell pepper, onion, pimentos, seasoned salt, cayenne, and salt and black pepper to taste. Stir to mix well. Add the cooked spaghetti and 1/2 cup of the reserved pasta water and stir to combine. If the mixture seems too thick, stir in a little more pasta water.
- Pour the mixture into the prepared baking dish and bake, uncovered, for 35 to 45 minutes, or until bubbly and hot. Let cool for a few minutes before serving, and then sprinkle with chopped parsley, if desired.
Just writing about this makes my mouth water. The creaminess of the mushroom soup, the tanginess of the diced pimentos, and the sharpness of the cheddar cheese all complement the tender, juicy chicken so well. And the seasoned salt and cayenne pepper add just the right amount of heat and flavor.
I know some people shy away from casseroles, but this one is seriously worth trying. It’s perfect for a cozy weeknight dinner or a potluck with friends. Pair it with a simple green salad or some garlic bread, and you have a meal that will satisfy even the pickiest of eaters.
