Calico Beans Pioneer Woman

Ingredients:

  • 1 pound ground beef
  • 1/2 pound bacon, diced
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 1 can kidney beans, drained and rinsed
  • 1 can white beans, drained and rinsed
  • 1 can pinto beans, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes with green chilies, undrained
  • 1/2 cup ketchup
  • 1/2 cup barbecue sauce
  • 1/4 cup brown sugar
  • 1 tablespoon chili powder
  • 1 teaspoon salt
  • 1 teaspoon ground cumin
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper

Instructions:

  1. In a large skillet, cook the ground beef until no longer pink. Drain and set aside.
  2. In the same skillet, cook the diced bacon until crispy. Remove with a slotted spoon and place on a paper towel-lined plate. Set aside.
  3. Add the onion and green bell pepper to the skillet and cook until softened, about 5 minutes.
  4. In a large bowl, combine the cooked ground beef, cooked bacon, onion, green bell pepper, drained and rinsed beans, diced tomatoes with green chilies, ketchup, barbecue sauce, brown sugar, chili powder, salt, cumin, black pepper, and cayenne pepper. Mix well.
  5. Pour the mixture into a slow cooker and cook on low for 6-8 hours, or on high for 3-4 hours.
  6. Serve hot with your favorite toppings, such as shredded cheese, sour cream, and green onions.

  • 1 cup cooked brown rice

Instructions:

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. In a small bowl, mix together the chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, and black pepper.
  3. Place the chicken breasts on a large baking sheet and drizzle with olive oil. Sprinkle the spice mixture on both sides of the chicken, rubbing it in with your hands.
  4. Arrange the sliced bell peppers and onions around the chicken on the baking sheet.
  5. Bake for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
  6. Remove the chicken from the baking sheet and allow it to rest for a few minutes. Slice it into strips.
  7. Divide the chicken, peppers, onions, black beans, and brown rice into meal prep containers.
  8. Store in the refrigerator for up to 4 days. When ready to eat, simply reheat in the microwave!
