Cowboy Calzone

Now, don't go gettin' all spooked by the ingredient list. It may look like a longhorn, but it's really not too tough.

  • 1 pound homemade or store-bought pizza dough
  • 1/2 cup marinara sauce
  • 1/2 pound cooked and crumbled ground beef
  • 1/2 cup thinly sliced onion
  • 1/2 cup thinly sliced mushrooms
  • 1/2 cup diced bell pepper
  • 1/2 cup cooked and crumbled bacon
  • 2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh basil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon olive oil
  • 1 large egg, beaten with 1 teaspoon water

First, preheat your oven to 400°F (200°C). Place your pizza dough on a floured surface and roll it out into a large circle or rectangle, depending on how you want to shape your calzones. Cut the dough into quarters, then stretch each piece into a football shape.

Now it's time to load up your calzones with all those tasty ingredients. Start by spreading a couple of spoonfuls of marinara sauce on one half of each piece of dough, leaving about a 1/2 inch edge.

Next, top the sauce with some ground beef, onion, mushrooms, bell pepper, and bacon. Sprinkle a generous amount of mozzarella cheese over the top, followed by a little Parmesan and some fresh parsley and basil. Finally, sprinkle on some dried oregano, garlic powder, and red pepper flakes if you like a little spice.

Use your fingers to moisten the edges of the dough with a little water, then fold the other half of the dough over the top of the toppings and pinch the edges together to seal. Use a fork to crimp the edges for extra security.

Brush each calzone with a little olive oil, then cut a few small slits on the top to let steam escape. Brush the tops of the calzones with the beaten egg and water mixture.

Bake your calzones for 20-25 minutes, or until the crust is golden brown and crispy. Let cool for a few minutes before slicing and serving.
