  • 1 pound dried Great Northern beans
  • 1/4 cup olive oil
  • 1/2 pound pancetta, diced

  • 6 cups chicken broth
  • 1 (28-ounce) can diced tomatoes, undrained
  • 2 teaspoons dried thyme
  • 1/2 teaspoon red pepper flakes
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 pound ditalini pasta
  • 1/4 cup grated Parmesan cheese

Directions:

  1. Rinse beans; drain. Place beans in a Dutch oven. Add water to 2 inches above beans; bring to a boil. Cook 2 minutes; remove from heat. Cover and let stand 1 hour.

  3. Cook pasta according to package directions, omitting salt and fat. Serve soup with pasta and cheese.
