Pioneer Woman Biscotti

Good morning, everyone! Today I wanted to share with you my favorite recipe for biscotti. This Italian baked treat is perfect for pairing with a hot cup of coffee or tea, and is sure to impress your friends and family.

How to make biscotti:

To start, preheat your oven to 350°F. In a large bowl, whisk together 2 cups of flour, 1 teaspoon of baking powder, and 1/4 teaspoon of salt.

In a separate bowl, beat together 3/4 cup of sugar and 2 eggs until light and fluffy. Add in 1/2 cup of melted butter and 1 teaspoon of vanilla extract, and mix until well combined.

Add the wet ingredients to the dry ingredients, and mix until a dough forms.

Turn the dough out onto a floured surface, and divide it into two equally sized portions. Roll each portion into a log about 12 inches long and 1 1/2 inches wide.

Place the logs onto a baking sheet, and bake for 25 minutes, or until lightly golden brown. Remove from the oven and let cool for 5-10 minutes.

Once the logs are cool enough to handle, slice them into 1/2 inch wide pieces, and arrange them on the baking sheet cut-side down. Bake for an additional 10-12 minutes, or until crisp and golden brown.
